Jypsy by PS.Cafe rolls out new lunch menu creations that showcase the versatility of Japanese cuisine.

SINGAPORE (June 10): Make a midday escape to the fishing village-inspired charms of Jypsy, a casual dining concept by PS.Cafe, flush with rustic wooden accents, natural sunlight and nautical hues. Here, iconic dishes such as donburi and sushi are creatively fused with every cultural influence imaginable, resulting in a uniquely Japanese take on international delicacies such as ceviche, sliders and even mee goreng. Perhaps the most social media-worthy example is the restaurant’s signature Jypsy Salmon Tacos ($14++ for two), where morsels of king salmon, avocado, salmon roe and tomato salsa are encased in crispy “taco shells” of seaweed, as well as styled for both viewing and tasting pleasure.

Joining Jypsy’s lunch menu is a series of hearty one-bowl meals. In lieu of sashimi cuts found in regular chirashizushi, slivers of deep-fried chicken are scattered with shrimp roe, omelette bits and green onions atop a bed of seasoned rice in Kara-age Chirashi ($16++). This dish strikes me as a witty incarnation of the traditional oyakodon — a simmered dish of chicken, egg and onions over rice — albeit with much more pronounced textures and flavours in its drier form. A true jaw-dropper for many, though, would be the Tajima Beef Fried Rice ($23++), which can be found under the menu’s “All Day Bowls” list, although it is currently available only during lunchtime. The thick, velvety slivers of grilled wagyu tasted even more decadent with umami-packed kombu butter fried rice, in which finely cut pickles are hidden to provide surprise crunches of sweetness in between bites.

Also making its debut is the Katsu Sando, which features either katsu chicken ($16++) or Iberico pork cutlet ($18++) with Japanese barbecue miso sauce and grilled shishito pepper. The “sando”, an abbreviation of sandoichi (sandwich in Japanese), is presented in dainty, bite-sized cuts reminiscent of an English tea party’s, but easily makes a meal on its own for those with smaller appetites. It comes with a heap of freshly shredded cabbage on the side as a palate cleanser or simply as a healthy dose of fibre.

Australian winemaker Penfolds celebrates its 175th anniversary by rolling out three champagnes through its first-ever collaboration with family-owned champagne house Thiénot — beginning with introduction of the 2012 Champagne Thiénot x Penfolds Chardonnay Pinot Noir Cuvée this June. Its siblings, the Blanc de Blancs (Avize Grand Cru) and Blanc de Noirs (Aÿ Grand Cru), are due for release in 2020. All three champagnes are made from grapes sourced from prestigious, highly regarded vineyards in champagne from the 2012 vintage. www.penfolds.com

Maison Veuve Clicquot’s new champagne service ritual, Yellow Hour, was launched in Singapore in May at CÉ LA VI. Simply order a glass of Veuve Clicquot Yellow Label ($37++) at the Marina Bay Sands rooftop bar from 6pm to 9pm to enjoy a complimentary portion of “shake-it-to-make-it” fries with smoked seaweed salt, as well as house-made sriracha mayonnaise on the side. Astor Bar at The St Regis Singapore is offering an exclusive “white pairing” option to go with its emblematic Ruinart Brut NV Blanc de Blancs, which is available by the glass at $49++ or at $288++ per bottle.
