The Great Bay Fiesta
The Great Bay Fiesta returns after a three-year hiatus with a magical fun-filled playland designed for small and big kids to let their hair down and run riot into the new year.
Organised by The Show Master (an Uncle Ringo company) and presented by Trip.com, The Great Bay Fiesta is now open at Bayfront Event Space till Jan 1, and held in conjunction with the Marina Bay Singapore Countdown.
The four main event segments include The Great Cirque de Cascades featuring an 80-minute show of live circus acts by Gandey’s Circus; The Great World Carnival filled with nostalgic rides and games; The Great Food Fiesta offering over 30 mouth-watering bites; and Ice Magic: The Great Fantasy on Ice, the biggest pop-up winter attraction complete with snow-filled activities, and an ice bar.
One of the highlights of the carnival is the crossover between Uncle Ringo and OpenSea that brought the highly sought-after NFT IP of Prime Ape Planet design (from the Genesis Collection) to life. This is Uncle Ringo's first foray into the web3 landscape to explore an omni-channel integrated experience for its visitors using the NFT IP space.

The event will also present Singapore’s first Tesla electric light show. Leveraging on the functionality of electric vehicles, these Tesla models – Model 3, Model Y, and Tesla Supercharger — will be putting up a jazzy light show with its headlights, taillights, cabin lights, and other lighting, programmed to beat in sync with the music.

Cantonese delights
Shang Palace
A dining institution that has been an exemplar of sophisticated Cantonese gastronomy since 1971, one Michelin-starred Shang Palace welcomes chef Daniel Cheung from the brand’s Kowloon branch (also one Michelin-starred) to helm its Singapore kitchen at Shangri-La Singapore.
Bringing with him 37 years in top-level Cantonese cooking, Cheung will present his well-loved signature creations from Hong Kong, where he interprets Cantonese classics in his own distinctive style and elevates them for the modern gourmand.
Among the most well-loved are Applewood Smoked Bean Curd Rolls with Shiitake Mushroom, Carrot and Green Mustard ($18); Fried Rice with Kagoshima Wagyu Beef served in Whole Tomato ($28); Braised Bamboo Pith stuffed with Imperial Bird’s Nest and topped with Crab Coral ($120); as well as Steamed Spotted Garoupa Fillet in Egg White Sauce topped with Crispy Parma Ham ($48). Diners can also look forward to the chef’s “personal” versions of classic Hong Kong dishes such as Cantonese Style Crispy Chicken ($38), and Deep-fried Stuffed Crab Meat in shell ($38).
To celebrate a sense of place, Cheung has also curated Singapore-inspired heritage dishes, namely, the Baked Live Prawns with Garlic and Sarawak White Pepper ($58), and Stewed Shrimp Pomelo Peel ($28) — a high-technique, labour-intensive recipe centred on fully maximising ingredients, minimising waste and up-valuing under-utilised ingredients.

Founder of Michelin-starred Nouri and creative interdisciplinary space Appetite, chef Ivan Brehm teams up with author of award-winning book, The Food of Singapore Malays, Khir Johari, to hose a unique gastro-forum experience on Dec 9 and 10.
Named Crossroads: Archipelago, the event kicks off on Dec 9 at 5pm with a Salon Session ($125++ per person) conducted at Appetite’s Listening Room where the duo will discuss on the topic, “‘The Malay Archipelago: A Metaphor for Inclusivity in the Age of Globalisation’”. The hour-long joint talk will explore the influence Malay food traditions have had on the culinary and cultural landscape of the region and beyond.
On Dec 10, guests will be treated to a one-night-only dinner ($388++) at Nouri featuring a tasting menu of dishes inspired by the flavours and techniques of Singapore’s Malay culinary canon. Expect modern and unexpected interpretations of traditional Malay classics like Ayam Masak Puteh and Asam Pedas. Diners who book the dinner will have automatic access to the dialogue session.
