EAT | High-rise dining | Skai

Swissôtel The Stamford’s sky-high restaurant Skai refreshes its à la carte menu under the leadership of new executive chef Seumas Smith, who will serve contemporary grill dishes shaped by Japanese produce and techniques.

With 12 years of culinary expertise under his belt, Seumas has honed his craft in numerous Michelin-starred kitchens, including Heston Blumenthal’s two Michelin-starred Dinner in London, and most recently, ION at Iniala Harbour House Malta, which also holds a Michelin star.

His firm appreciation for the art of Japanese cooking can be felt strongly in dishes like the Shima Aji ($26), a fusion of mackerel, hamachi and abalone which features a lightly grilled blue abalone served with a rich umami beef broth. Other must-tries include the Beef Tartare ($42), a twist on the classic that features a Korean spicy-miso Gochujang, served alongside freshly-baked sourdough and cured Japanese egg yolk; Kuruma Ebi ($34) grilled over the Japanese binchotan complemented by a Japanese heirloom tomato consommé; and Hokkaido Scallop ($42) lightly seared and served with a miso beurre blanc sauce.

Vegetarians will welcome the BBQ Beetroot ($26) featuring three types of beetroots and the BBQ Cauliflower ($32) served with a confit of Japanese leeks. The new menu also boasts an exquisite selection of premium beef from around the globe, with a special focus on esteemed Australian and Japanese cuts. Savour the Westholme Wagyu Prime Rib ($288 for two people), Saga Wagyu A5 ($155), Miyazaki Wagyu New York Strip ($135), Mackas Ribeye ($88), and Mackas Tenderloin ($98).

DRINK | Rum revelry | Capitol Kempinski Hotel Singapore

The Capitol Kempinski Hotel Singapore will launch its first-ever Singapore Rum Festival on July 8 and 9, presenting over 20 of the best rum brands in the game. For its first edition, guests can sample Southeast Asian rums such as Samai from Cambodia and Phraya and Chalong Bay from Thailand.

Alongside tasting experiences, the two-day event will feature curated masterclasses by industry experts and rum tastings with The Bar at 15 Stamford’s Bar Manager, Edriane Lim, on July 8 from 4pm to 7pm, and one premium rum tasting by The Rum Cartel on July 9 from 4pm to 7pm. Cocktails and food will also be served at an additional price.

Centennial celebrations | The House of Suntory

The House of Suntory, the founding house of Japanese whisky, celebrates its 100th anniversary of whisky innovation with a full line-up of activities this year. This month, head to the ArtScience Museum from July 13 to 17 for The Legacy Continues: 100 Years of Suntory Whisky Innovation, an exhibition documenting the brand’s storied history.

You begin at ‘The Awakening’, which recreates the look and feel of Yamazaki’s famed distillery. The journey continues to The Boom, a walkway showcasing the different periods and defining moments in the revolution and modernisation of Japan’s bar culture.

Visitors will also be the first in the world to preview the first part of the mini docuseries The Nature and Spirit of Japan, featuring actor Keanu Reeves and directed by filmmaker Roman Coppola. As part of the immersive tasting experience, guests can imbibe some of the brand’s exceptional Japanese whiskies.

The apex of the exhibit, The Bar — a 30-seater minimalist bar set-up — transports visitors to three distinct eras of Japan’s drink culture, each accompanied by curated visual projections, playlists, and performances. During each era, patrons will be treated to whisky flights and cocktails featuring Suntory’s exquisite limited-edition Yamazaki, Hakushu, and Ao whiskies.
