Following a transformative multimillion-dollar renovation, the iconic Grand Hyatt Singapore has finally reopened its doors.

The monumental two-year project has refreshed the Grand Hyatt Singapore’s aesthetic and functional aspects and approach to hospitality. The extensive revamp extends across the hotel’s accommodations, facilities, and, notably, its dining venues, which have been reimagined to cater to the evolving tastes of international travellers and local patrons alike.

The redesign includes a modern yet timeless approach to decor, featuring natural materials and a palette that complements its vibrant urban surroundings. The hotel has also upgraded its technological infrastructure to provide guests with seamless digital interactions and conveniences at every turn, from check-in counters to dining areas.

StraitsKitchen and Pete’s Place, two restaurants within the Grand Hyatt Singapore, have similarly been updated to enhance their appeal. They offer distinct dining experiences that reflect global trends and local flavours.

Options takes a look at how these dining spots — as well as some of the Grand Hyatt Singapore’s other F&B offerings — have been given a modern boost. Be sure to also check out our review of the newly opened Le Pristine by chef Sergio Herman.

Pete’s Place

On the other side of the culinary spectrum but with equal appeal, Pete’s Place, one of Singapore’s oldest Italian eateries, has also returned. Known for its rustic charm and hearty Italian meals, the restaurant has embraced a new era while staying true to its roots. It now features a modern yet cosy ambience, enhancing the dining experience without losing its familiar warmth.

Under the guidance of newly appointed chef Salvatore Giorgio Catania, Pete’s Place serves up classic Italian cuisine with a focus on authenticity and freshness. Of course, its famed tiramisu is still available, with a large tray brought out tableside and scooped onto your plate in front of you.

The new menu features beloved staples such as veal Milanese, as well as a variety of hand-tossed pizzas and pastas. A grand wine cellar and a private dining area have also been introduced, adding an extra layer of sophistication to the venue — perfect for both casual lunches and intimate dinners.

StraitsKitchen

Renowned for its decadent array of local cuisine, StraitsKitchen has been given a fresh new look and an enriched menu that continues to celebrate Singapore’s diverse cultural heritage.

The first halal-certified buffet restaurant in a five-star hotel along Orchard Road offers a culinary journey through the best of Chinese, Malay, Indian, and Peranakan dishes, with some dishes prepared à la minute in show kitchens.

Chef de cuisine Nelson Wong, who brings with him over 25 years of culinary experience, remains at the helm of StraitsKitchen. His expert touch is evident in signature dishes such as the aromatic fish head curry, savoury salted egg prawns, and tender barbecued “Roaring Forties” lamb; we also like the beef rendang and butter chicken. These dishes not only tantalise the palate but also tell the story of Singapore’s rich culinary traditions.

The Shop

As part of the Grand Hyatt Singapore’s upgrades, The Shop has also been revitalised. This gourmet hub is ideal for guests seeking light bites or a quick coffee. A must-try for anyone visiting The Shop is its classic butter chicken puff. For those in need of an afternoon pick-me-up, The Shop also offers coffees with decadent flavours like pandan and tiramisu.

BRIX

Down the stairs from The Grand Hyatt Singapore’s main entrance is BRIX, an ideal spot for anyone looking to unwind after a hard day’s work. With solid drinks, a vibrant atmosphere and live band performances, the bar provides a peek into Singapore’s dynamic nightlife scene. Those seeking a more mellow time can duck into its Quiet Zone, where you’ll find a wine and whiskey bar.
