National Museum of Singapore
On Christmas Day, catch All I Have To Do Is Dream— an in-gallery theatre performance about the Singapore Dream through the eyes of our seniors. Two mysterious figures wake up in the National Museum of Singapore on National Day. Both exist to collect dreams — one has the ability to draw out deep- er knowledge behind objects, and another uses sign language, sculpting meaning in the air with his fingers. With the help of a young museum worker with Down Syndrome, they embark on a journey through the galleries, collecting dreams of the past and present.
This play conducted within the museum itself is part of Children’s Season at the National Museum 2021 — a year-end festival packed with chock-a-block activities for kids of all ages to reignite their love and curiosity for Singapore’s history and culture.
This physical performance will be held on Dec 25, 10.30am to 11am and 2.30 to 3pm, kicking off outside Growing Up Gallery, Level 2. Each $15 ticket admits one child (suitable for ages 5 and up) and one adult only. Visit AIHTDIDCS2021.peatix.com to register.

Heritage whisky label from Speyside, Scotland, The Glen Grant completes its single malt collection with a highly-decorated 15-year-old single malt Scotch now available in Singapore.
Since its official launch in 2019, this dram has received praise from some of the world’s top spirits competitions. At the 2020 New York International Spirits Competition, it was declared “Single Malt Scotch of the Year”.
This year, The Glen Grant 15 Years Old took 93 points (“exceptional”) and a gold medal from the Beverage Tasting Institute in 2021, as well as 92 points from Ultimate Spirits competition, Double Gold medals from the San Francisco Wine and Spirits Competition (in 2019 and 2021), and a Platinum award and 94 points at the Ascot Awards from veteran tasting and whisky expert Fred Minnick.
What makes it especially unique is that it is the only variant in the collection that has undergone a non-chilled filtration process, giving it a full-bodied flavour profile with deepened textures. Typically, chilled filtration helps to make spirits more see-through. Matured in hand-selected first-fill ex-bourbon casks, this golden liquid at 50% ABV (alcohol by volume) offers aromas of citrus fruit and toffee accompanied by a rich palate of spiced pear, apricot and vanilla, leaving a nutty finish with delicate notes of fruit.

Founded in 1840 by John and James Grant in Rothes (a town in Moray, Scotland), it boasts a double distillation process, setting its multi award-winning single malts apart from the competition. KOKS
Two Michelin-starred KOKS from Faroe Islands — supposedly the world’s most remote restaurant — takes up temporary residency at Grand Hyatt Singapore from Jan 23 to Feb 18 to delight diners with its re- fined Nordic cuisine.
The core team of chefs and front-of-house staff — led by executive chef Poul Andrias Ziska — fly down from Leynavatn, the sixth-largest natural lake in the Faroe Islands and the location of the restaurant — to give diners an authentic KOKS experience. They will also be using the finest sustain- ably sourced produce flown-in from Faroe Islands. Incidentally, this will be their first visit to Singapore.
For its tasting menus, KOKS will present some of its fermented signatures, such as the fermented ocean perch with fermented lamb intestines and cheese, and cod fillet with fermented cabbage and caviar. Other signatures include the Langoustine Roll, made with wild caught Faroe Islands lobster.
For this residency, KOKS’ sommelier Karin Visth will be working closely with the sommelier team at Park90, Singapore’s leading wine bar, to curate an ex- tensive wine pairing list to complement the umami-rich ingredients served by the award-winning restaurant.
